Print-on-Demand is great for people who don't expect to sell thousands of books, and it's a good way to "test the waters" for your book, to see if reviewers like it, and if people will buy it. But the per book cost through POD is much higher than it is for books printed in large quantities. This is because the cost of the POD setup is relatively low, while the setup for offset printing is very expensive. 

One way to think about this is that printing in large quantities offsets the cost of that setup: The larger the run, the lower the cost of production per book. Once the number of books to be printed goes over 1,000 - 3,000 books, the cost of offset printing goes down dramatically.  So, if you already know that you're going to need a lot of books, or if you already know that there's a market for your books, you may want to consider having them printed in quantity through offset printing.
